THE RUBBED CONCEPT

By day RUBBED will function as a quick–service sandwich shop, offering made-to-order signature and custom sandwiches, salads, deli-style sides. In the evening the space will transition into a more relaxed cafe-style setting where patrons can enjoy charcuterie boards along with small dishes. 

Delivery services will be phased in beginning with the Corktown neighborhood and expanding to cover the entire Grand Boulevard Loop. Office catering with drop-off services will also become available over time


The dual-use concept is designed not only to make the best use of RUBBED’s infrastructure, equipment and inventory, but also to fill more of the void in terms of food service availability in Detroit. RUBBED will begin with extended hours 7 days a week with the hope of growing into late-night service. As strenuous as it may be, Jason and Abbey believe that expanding the availability of retail services is just as important as growing the business environment in Detroit. 

A vintage hand-crank slicer will serve as a visual and functional centerpiece of RUBBED. The superior craftsmanship and accuracy of the hand-crank design shaves tough, cured meats into translucent, buttery slices that access and enhance the true flavor and texture. 

Locally-sourced and in-season ingredients along with a variety cured meats, handcrafted cheeses and specialty imports will dictate RUBBED’s ever-changing menu. While cured meats will be highlighted throughout the menu, the RUBBED concept at it’s core is focused on providing simple, fresh and quality food options to Detroiters. Vegetarian and vegan options will be aplenty, not just because people want them, but because they’re delicious.


LOCAL ENTREPRENEURSHIP 

RUBBED co-founders Jason and Abbey bring a combined 25 years of food and beverage service and event management experience to the table. From their years of experience in the Metro-Detroit area, Jason and Abbey have developed valuable relationships with many people and businesses in the local food and beverage industry. 

Not only do they have access to the best chefs and service professionals in the region, but they also have direct connections with vendors and local producers to source the best products available. 

RUBBED’s value is derived from a combination of planning, experience, market access, passion, quality, consistency, and vision. As long time Detroit residents Jason and Abbey embody the entrepreneurial spirit that the city is known for. Since its conception, RUBBED has gained momentum in the community through events, local news coverage and social media. 

Utilizing the expertise of other local entrepreneurs for everything from their renovation process through purchasing and sourcing, RUBBED will not only be for the community, but also of the community.


PROJECT DETAILS

After a few years of talk and 6 months of planning, we signed a lease for our space on Michigan Ave last June. We're just a block from Astro, Slows and Sugar House, and right next door to the new Motor City Wine! 

We couldn't be more thrilled to be joining the growing retail landscape in Detroit's Corktown neighborhood! 

Over the past 7 months, we've obtained the vast majority of the equipment we'll need, and the space is nearly ready to open for service! Currently, we're working on obtaining our permits and licensing while putting the finishing touches on the shop and planning our pre-opening events. 

To this point, we've financed RUBBED entirely out of our own pockets, without having to borrow anything. To help fund the last leg of our project, we've decided to get the community involved by offering great perks in return for donations!
