We all hear stories about the appalling state of school lunches. That they are often over-processed, fatty, junk-foods with little nutritional content left. What if your child’s school had amazing lunches right from the garden? That has been a dream of The Green Asylum since we started our little company last year.
I’m Amy, and along with my sister Rose, we embarked on an adventure to change people’s idea of what it means to eat “vegan.” We were pretty sick of the stereotype of subsisting on tofu and salad. We’re from the South ourselves, and we spent many hours in the kitchen as children learning how to make “cowboy biscuits” and hearty stew, navy beans and cornbread slathered in honey, chicken ‘n dumplings, crunchy coleslaw, Grandma’s recipe cranberry relish, apple pie from scratch, fresh-picked-peach preserves…hungry yet? While it took some practice to learn how to convert all these great favorites to healthy plant-based versions, the effort has really paid off!
We have had a blast developing our recipes, teaching classes and doing demos, catering events, and baking our signature goodies. When a friend from Pax Academy approached us, we were so delighted! They didn’t have their own cafeteria and were interested in lunch box delivery. Pax Academy is an amazing K-12 school in Tempe, Arizona with a visionary leader who recognizes the relationship of good nutrition to academic success. We specialize in raw-fusion, gluten-free, dairy-free cuisine.Raw food is defined as unrefined, unprocessed, and untreated with heat (over 115 degrees). Raw food is fresh, ripe, and whole! Gluten-free foods contain no wheat or other grains containing gluten, a major source of allergies and health problems. What we need:
- A delivery van (The Health Department says we need a dedicated van for delivery on this scale.)
- An additional permit (We have stacks of permits and licenses, but, well, you know. It’s the Health Department.)
- A modest list of supplies (Stuff like warmers for the van, eco-friendly containers, additional baking supplies for Rose’s voracious baking appetite…)

So what happens if we exceed our goal? Well, if we exceed it by a little bit, we will invest in great supplies and equipment for our expanding business. If we exceed by a lot…OUR DREAM RESTAURANT! The Pax Academy is interested in teaming up to build a teaching kitchen/café for students to learn about healthy cooking and the restaurant business. Oh, yeah!
